My mum....

Would make boiled egg sandwiches to take with us to Southport on the train, back in the fifties. A bottle of cold tea would be the accompaniment. She would boil the eggs early in the morning and shell them into a large cup. Add butter and salt and pepper and chop finely. We didn't have much money back then and I remember thoroughly enjoying those sandwiches. I still make them once in a while just as a memory.

The good old days, say lots of folk..I don't know but the memories are fantastic.

Roast beef dinners on a Sunday. Chicken was a luxury....and so I reminisce......

You've both got my memory and my taste buds working overtime!
Very partial to egg butties, and I always got egg chopped up in a cup with toast soldiers, if I was a bit offside.
Nothing I enjoy more nowadays than a couple of soft boiled eggs chopped up with plenty butter and pepper, and spread on hot buttered granary toast.

... also... if you are lazy begger like me who cannot be bothered shelling them when they are hot, try these. Thy take a bit longer for a hard boiled egg (15 mins)... but they make life a bit easier.



Just be sure to smear the insides with butter so the egg slides out easily.
