Gratered Cakes.
As many of you will have gathered by now, jackbit is never far from my mind.
How many of you ate, or remember, ‘gratered cakes’?
They were a tasty, and much loved form of sustenance when I was a lad . . .
Coarsely grate peeled raw potatoes (I mean use the coarsest side of the grater, not perform the operation in a vulgar manner), and then fold the result in a tea towel or kitchen roll, to squeeze the excess moisture out.
Mix with grated onion, and then add flour, beaten egg, and perhaps a drop of milk, to form a thick batter (grated cheese can also be added).
Season the mix well, and fry dollops of it in a hot pan, browning both sides.
You end up with something like a rosti, only a damn sight tastier.
Now, wheer’s mi fryin’ pon an’ grater?

Wow, we never had them but they sound delicious, as our Mo says. I WILL be making them exactly your way.
I have made them as dry cakes by squeezing the water out of the potatoes and adding seasoning as Rosti.
I'll let you know...............

Sorry I can't be more specific as to weights and quantities Admin, but it's one of those recipes where I don't measure anything - I just know when it's right!

When we do these, its almost exactly the same way, but with the addition of red paprika and mushrooms.
