Lolly – it’s a bit of a ‘cheat’ from a cookery point of view . . .
I get a ready cooked pigs’ stomach, cut it into one inch pieces, brush it with shop bought Dunns River jerk marinade, and leave it to stand for a while in a dish.
I ‘pre-prepare’ some black turtle beans, and then cook long grain rice in a mixture of salt water and coconut water, with some crushed chillis added.
When the rice is nearly cooked, add beans to it to heat through, and heat the pig’s tripe in microwave.
Serve with green salad and a big dollop of coleslaw.

Ordinary seam tripe good cooked in tomato passata, with pitted black olives, and garlic, and traditional tripe and onions is one of my all time favourite meals, with 'hafe a dozen shives off a two pound loaf'.

I very often cheat when cooking. I'd never have thought of jerk marinade.

The one I mentioned in the recipe is a shop bought one in a jar, but I love experimenting making my own.

I used to buy a ready made jerk marinade for chicken, but Sainsbury stopped selling it.
I'll look out for Dunns River, and try the tripe
